For all of you that wanted to have my Baked Potato Salad recipe, here it is. A big winner for those of us who don't like eggs and normally don't get to eat potato salad.
6 Medium Baking Potatoes ( I used red potatoes, probably about 8 of them)
3/4 C sour cream
3/4 C mayonnaise
8 slices chopped, cooked bacon
1/2 C chopped red onion
1/2 C chopped celery
1/2 tsp salt
1/4 tsp coarsely ground pepper
sliced green onions (optional)
shredded cheddar cheese (optional)
Bake potatoes until tender, I used my microwave. Allow to cool completely. Meanwhile, combine sour cream and mayo. Add red onions, bacon, and celery. Stir in salt and pepper. Cover and chill until ready to use. When potatoes are cool, coarsely chop in to 1/2" pieces, stir in sour cream mixture and cheese and green onions. Cover and chill for several hours (if you have time, still turns out great if you don't have time).
Makes about 12 servings
